If you have a love for asparagus like I do then your going to love this tasty dish, I call it a loaf but to be honest it is more like a casserole because of the way it is prepare so go into the kitchen and lets start this dish.
Asparagus & Egg Loaf‏
1 cup of coarse cracker crumbs
4 tablespoons of butter
1/2 teaspoon of grated onion
1 tablespoon of chopped parsley
1/2 teaspoon of sea salt
1/4 teaspoon of white pepper
2 medium eggs
2 cups of hot milk
4 cups of fresh asparagus, scraped and cut into 1' lengths
1 cup of light creams sauce
A pinch of chopped chives
1/3 cup of grated Parmesan cheese
Methods
To begin:
Saute cracker crumbs in butter with grated onions, chopped parsley, salt and white pepper for 5 minutes. Beat eggs lightly and stir into them the hot milk.
Combine with asparagus and crumbs. Bake in a butter loaf pan approximately 5 1/2' by 9 1/2' in a preheated 375 oven for 30 minutes or until set. Serve with cream sauce seasoned with chives and cheese to taste. then enjoy.
