BBQ Chicken Tacos

Preparing the Meat

Meat preparation can be the key to a delicious meal. There are several ways to prepare the chicken for this dish. Canned chicken can be used as well as boiled chicken. In this case, I used a crockpot and an entire bottle of my favorite Honey BBQ sauce to slow cook seven or eight large chicken breasts. They simmered on low all day. After cooling them, I put the cooked chicken in the refrigerator overnight.

After removing the chicken from the refrigerator this evening, I sliced it into bite size pieces. It was so tender that it fell apart. I used two thirds of the prepared chicken for this meal.

Spray your deep skillet with Pam or your favorite cooking spray. Add one half of an onion sliced into rather large pieces. Add one half of a green pepper cut to bite size pieces. Simmer these lightly in your pan. Add the chicken pieces and simmer with your vegetables. Warning, don't overcook your recipe.


Cooking your recipe

As the chicken warms and the vegetables grow soft, add 1/2 cup of fresh salsa. In addition, add 1/2 cup of salsa sauce. Continue to warm your ingredients on a medium heat, stirring as needed. If your chicken is dry, add more salsa.

While the main dish is heating, warm a package of flour or corn tortillas in the microwave. I warm them stacked on a plate for two minutes. Shred some of your favorite cheese into a serving bowl to sprinkle on your taco. Slice an avocado and place it in a bowl. Serve with Pace Picante Sauce.

Dinner is Served

An alternative to the condiments above is to fix a salad with your favorite dressing. This salad can be placed in the taco with the chicken. Our favorite dressing for tacos is Italian. It blends very well in a taco and adds some moisture.

We like to serve dinner with lots of condiments and side dishes on the table. Place a large bowl of chicken in the middle of the table and surround it with tortillas, cheese, avocado, and salsa. This allows each person to build their own taco! Add some jalapenos for the pepper bellies in the family and Enjoy!
