10 Quick and Easy Bacon Recipes

#1 Bacon Wrapped Lil' Smokies

These are always the hit of any gathering.

Prep time is just 5 minutes and cooking time is 40 minutes.

Ingredients

1 lb.Bacon

1 16 oz. package Lil' Smokies

1 cup Brown Sugar

Directions

Pre heat oven to 350°, line a baking sheet with tin foil for easy clean up, cut 1 1lb. package bacon into thirds, open a 16oz. package of lil’ smokies sausages, wrap a cut bacon slice around each lil’ smokie sausage, thread the bacon wrapped sausages onto a wooden skewer or secure with a toothpick in each one, arrange the skewers on the lined baking sheet, sprinkle them liberally with 1 cup brown sugar, bake the smokies until the bacon is crisp, usually about 40 minutes, turn the smokies after about 20 minutes so both sides are evenly browned and crisp. Enjoy!

#2 Bacon Wrapped Scallops

Prep time is 5 minutes

Cooking time is 8 minutes

Ingredients

1 lb. bacon

1 to 1 1/4 lb. dry sea scallops

Directions

Pre heat oven to broil, cut 1 lb. bacon in half or thirds, wrap the sliced, cut bacon around the scallops, secure with toothpicks, place on baking sheet, broil and turn until crisp, about 8 minutes.

#3 Bacon Wrapped Hot Dogs

These are sure to please any guest.

Ingredients

1 lb. bacon (1 slice to each hot dog you grill)

1 package hot dogs of your choice

BBQ sauce (optional)

Directions

Fire up your grill or Pre heat your oven to broil, wrap each hot dog with a slice of bacon from top to bottom (one piece fits a hot dog perfectly) and secure it with a toothpick, cook on the grill turning it often to cook all sides evenly until the bacon is crisp (same for oven), usually about 5 to 10 minutes but watch it closely, remove from grill or oven, put in a hot dog bun, top with BBQ sauce and enjoy! Add any other sauces or toppings that you might like > ketchup, shredded cheese, mayo…etc.

#4 Bacon Wrapped BBQ Shrimp

Ingredients:

Prep time 10 minutes

Cooking time 15 minutes

Ingredients:

Large headless shrimp (however many you desire)

1lb. bacon cut in half (half slice per shrimp)

BBQ sauce

Directions:

Pre heat oven to 450°, clean, DE head, and DE vein the shrimp, leaving the tail, wrap the shrimp with a ½ slice of bacon and secure with a toothpick, place foil on a baking sheet for easy clean up, place wrapped shrimp on baking sheet, sprinkle with BBQ sauce, turn over and sprinkle other side with bbq sauce, bake the wrapped shrimp for about 15 minutes turning over half way through to get all sides evenly crispy. Enjoy!

#5 Bacon Roasted Potatoes

Yummy!

Ingredients:

1 lb. bacon cut into half or thirds

2 large red onions

5 lb. bag red baby potatoes

2 tbsp. melted butter

Directions:

Pre heat oven to 375°, cook bacon in skillet over medium heat until golden and crisp, reserve the bacon drippings, combine cut potatoes, melted butter, onions, and bacon drippings in very large bowl and mix well, spread potato mixture onto a large baking sheet, roast one hour, increase the oven temperature to 400°, add in cooked bacon slices and continue to roast until the potatoes are tender and beginning to brown, usually about 15 minutes, transfer this big yummy bacon/potato mixture onto a large serving plate and enjoy!

#6 Grilled Cheese with Bacon

Everyone likes grilled cheese!

Ingredients:

Country style white bread

Olive oil

Bacon slices, 2 per sandwich (cooked)

Monterey jack cheese slices

Directions:

Brush each side of all slices of bread with olive oil, lay on a clean surface oil side down. Add cheese on each slice of bread, place 2 slices of cooked bacon on top of the cheese and top with the rest of the bread slices oil side up. Heat on a Pre heated fry pan or skillet over medium heat until the undersides are golden brown, about 4 minutes. Enjoy!

#7 Rigatoni with Bacon, Tomatoes, and Peas

This is great!

Ingredients:

¾ lb. rigatoni

4 slices bacon, cooked and chopped

1 small onion, chopped

1 lb. tomatoes, cut into bite size pieces

1 oz. Parmesan cheese, grated

3 cloves garlic, chopped

1/8 tsp. Salt and pepper to taste (optional)

Directions:

Cook pasta until tender and drain reserving 1 cup of the boiling water for later. Cook the bacon in a fry pan or skillet until crisp, 6 to 8 minutes, flipping over half way through. Add the onion, garlic, and salt and pepper and cook until the onions are soft, 6 to 8 minutes. Add the tomatoes and cook until it thickens, 8 to 10 minutes. Add the peas, cook until warm, 5 minutes. Ad in the pasta, Parmesan, and ½ cup of the reserved boiling water and add more until you reach your desired consistency. Serve topped with Parmesan. Enjoy!

#8 Bacon Stuffed Burger

Best burger ever!

Ingredients:

1 lb. ground beef

Bacon, cooked and chopped, (4 to 6 slices)

1 cup Monterey jack cheese

Hamburger buns

Salt and pepper (to taste)

Any extra sauces or toppings you like on your burger

Directions:

Combine the Monterey jack cheese and the cooked, chopped bacon in a bowl and mix. Put the beef in another bowl and season with salt and pepper. Flatten a palm sized amount of beef in your hands, squeeze together about a tbsp of the cheese and bacon mixture into a nugget and place it in the center of the flattened beef. Flatten another palm sized amount of beef and place it on top of the nugget, squeeze the sides of the newly formed burger tightly to lock the edges. Repeat these steps for however many burgers you would like to make. Fry the burgers over medium – high heat for about 8 minutes on each side or you can grill them on your outdoor BBQ grill for the same amount of time. Toast your buns and serve with your favorite condiments. So delicious! Enjoy!

#9 BLT Salad

yum ! yum!

Ingredients:

1 lb. bacon, cooked ad crumbled

1 head romaine lettuce, rinsed, dried, and shredded

2 large tomatoes

2 cups seasoned croutons

¾ cup mayo

¼ cup milk

1 tsp. garlic powder

1/8 tsp. salt and pepper

Directions:

Cook bacon in a large skillet, turning frequently, until brown and crisp. Crumble and set aside. In a blender or food processor, combine mayo, milk, garlic powder, and black pepper and blend until smooth. Add salt. Combine lettuce, tomatoes, bacon, and croutons in a large salad bowl. Toss in the dressing and serve. Enjoy!

#10 Bacon and Potato Soup with Cheddar and Chives

Simply delicious soup

Ingredients:

4 russet potatoes

6 slices bacon chopped

1 small onion

2 cloves garlic (chopped)

3 cups chicken broth

3 cups whole milk

4 oz. cheddar cheese (shredded)

1/8 tsp. salt and pepper

Directions:

Cook bacon on a skillet over medium –high heat, turning frequently, until brown and crisp and set aside. Pour 2 tbsp. Of the bacon drippings into a large pot or Dutch oven. Add the onion and garlic to the pot and cook until softened, about 6 to 8 minutes. Add the potatoes, broth, milk, salt & pepper and bring to a boil. Reduce heat to simmer or low until the potatoes are soft and the soup is slightly thickened, about 40 minutes. Serve warm topped with the shredded cheddar, bacon crumbles, and chives.
