Baked Cod Fillets

Baked cod fillets are an easy and tasty second course that will delight everyone in the whole family. It's ideal for any lunch and dinner.

Although it appears to be a complex recipe, in reality, it is really simple! Just prepare breadcrumbs with many aromas, distribute it on the fish (I used frozen cod fillets), bake in the oven, and you will bring to the table a rich and delicious dish that will appeal to the whole family! I flavoured the breadcrumbs with oregano, parsley and lemon, but feel free to use all the spices you prefer by varying the recipe according to your tastes! The speed of execution of baked cod fillets in the oven makes it ideal for being prepared for a last-minute lunch. These baked cod fillets are also excellent for a dinner with friends; I'm sure that those who taste this baked fish will be hooked!

Ingredients

  • 400 grams cod fillets (I used the frozen ones)
  • 80 grams of bread crumbs
  • 1 lemon (juice and zest)
  • 2 tablespoons white wine
  • 1 clove of garlic
  • Salt and Pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley to taste
  • Oregano to taste

Instructions

1. In a large bowl, mix the breadcrumbs with the wine, oil, lemon juice and zest, chopped parsley, crushed and minced garlic clove, oregano, salt and pepper according to your taste. Mix all the ingredients with a fork until you get a mixture similar to wet sand. If necessary, add another drop of wine until you get the right consistency of the breadcrumbs.

2. Arrange the cod fillets on a baking sheet and cover with a thick layer of flavoured breadcrumbs. Cook the fish in a preheated oven at 180 degrees for 20 minutes, activating the grill function for 5 minutes before taking them out of the oven.
