Baked Jalapeno Poppers with Blue Cheese and Bacon
Looking for an easy game day appetizer? Look no further. These Baked Jalapeno Poppers are simple to make and are healthier than the fried version. The addition of blue cheese and bacon on top, instead of the normal cheddar gives the poppers a little more depth of flavor. The reduced fat cream cheese helps to make this a little healthier, but if you prefer a creamier texture use the full fat.

- 18-20 Jalapenos, (small-medium)
- 8 oz Reduced Fat Cream Cheese, softened
- 1 tsp Garlic,, minced
- 1/4-1/2 cup Shredded Cheddar Cheese
- 4-6 oz Blue Cheese,, crumbled
- 1.5-3 oz Hormel Real Bacon Bits
- 1-2 tsp Chili Powder
- Salt and Pepper, to taste
- Wash, halve and remove seeds and insides from jalapenos. I used small to medium and it made 36 poppers, but if you use bigger peppers you will end up with less.
- Preheat oven to 350 degrees.
- Mix together cream cheese, garlic, cheddar, chili powder and salt and pepper.
- Line a baking sheet with foil and spray with cooking spray.
- Fill each half with cheese mixture, careful not to overfill.
- Once all the peppers are filled, top each liberally with blue cheese crumbles and bacon bits.
- Bake for approximately 20-25 minutes, depending on your oven. Then broil at 450 for 2 minutes for a nice crispy top.
- Let cool 5 minutes and enjoy!
