Baked Jalapeño Poppers Wrapped in Bacon
Delicious & creamy irresistible jalapeño poppers. These culinary delights have a little kick but the spiciness is balanced by the cream cheese & bacon. These little beauties make perfect appetizers or an amazing addition to any party or get together. I made these for a family function with my in-laws a few months back & since then, people request that I bring them to every function we go to. These stuffed peppers are easy to make, scrumptious, inexpensive, & involves few ingredients. If you love stuffed peppers, give these a try. They are sure to delight & command a repeat performance.

Ingredients
- 20 Large jalapeños, Fresh, halved lengthwise with stem removed
- 2 tubs Cream cheese
- 1 package Bacon, Strips cut into halves
- 1 1/2 cups Shredded sharp cheddar cheese
Jalapeño Poppers Wrapped in Bacon
- Wash the jalapeño peppers off. Slice the stem off. Cut each pepper in half lengthwise & remove the veins & seeds. (You may want to wear gloves while doing this step).
- Use enough cream cheese to fill each pepper half. I just press a ball of cream cheese in each with my fingers.
- Top each pepper with 1 teaspoon of cheddar cheese.
- Wrap 1/2 slice of bacon around each stuffed pepper half .
- Place them on an ungreased pan (with sides as there will be grease). Place them in a preheated oven at 350 degrees. Cook about 20 minutes or until bacon is done. Drain excess grease & place the peppers on a platter or serving tray.
- Serve alone or with a side of ranch dressing. Makes a scrumptious finger food. One of my all time favorites. For variety, try mixing in a packet of dry ranch mix with the cream cheese before stuffing peppers.
