Basic Skillet bread, Gluten free (dairy free optional) Good for pancakes, sandwiches, etc.

Ingredients (may be doubled)

1 Large egg
1/2 cup milk of your choice (cow, almond, etc)
1/2 tsp baking soda
1-2 tsp olive oil (other liquid oils work well too)
Seasonings, for pancakes add some stevia (a few drops) or honey (1-2 tbsp); for burger buns, onion, salt, pepper, italian herbs; for sandwiches a pinch of salt
1/2 cup buckwheat or brown rice flour
1/4 cup almond flour

  1. Whisk together egg, milk, and baking soda. Let sit for a few minutes. Heat griddle to medium-high
  2. Mix in oil, then chosen spices
  3. SLOWLY add flour til you have the consistency you want.
  4. Cook on pre-heated and oiled griddle; when bubbly, flip over for about 1 minute.
