Even if you are completely rubbish at baking, muffins are so easy to make, because they are pretty much a success everytime you make them. So gives them a go and you will have a delicious breakfast treat in no time. If you are feeling really fruity, have breakfast in bed with them.

Fruitilicious muffin madness :-)

MAKES 12

* 200g/ 7 oz wholemeal self-raising flour

* 60g/ 2 1/4 oz self-raising flour

* 1 tsp of baking powder

* 2 medium eggs

* 50g/ 1 3/4 oz of light brown sugar

* 4 tbsp of olive oil

* 250ml/ 9 fl oz of milk

* 2 tsp grated orange rind

* 60g/ 2 1/4 oz of blueberries

* Muffin cases

METHOD:

1) Preheat the oven to 200 degrees C, fan 185 degrees C, gas mark 6

2) Sift the two flour and baking powder into a large bowl, tipping any grain particles left in the sieve into the bowl. Break the eggs into the flour and add the sugar, oil, milk, orange rind and blueberries.

3) With a wooden spoon, lightly beat the ingredients together until they are just mixed. ( it doesn't matter if the mixture is still lumpy, it's important not to over mix). Spoon into the muffin cases

4) Put into the hot oven and cook for 15-20 minutes until risen and firm to the touch. Turn out onto a cooling rack

5) Serve them warm or cool
