German Red Potato Salad
Becca's German Red Potato Salad
Summer is here!!!! A great time for picnics and cookouts. What better side item staple is there for outdoor dining than potato salad? If you are tired of typical yellow, mustardy potato salad and wanna try something a little different, I have a recipe for you. I fixed this potato salad for my husband's family recently and by unanimous decision I was awarded the official job of "potato salad maker" for all family functions. This potato salad is creamy with the yummy flavors of vinegar and bacon mixed in.

Ingredients
- 3 lbs red potatoes, sliced thin
- 1/2 cup red onion, diced
- 2 tsp salt
- 1/2 cup mayo, not salad dressing
- 1/4 cup vegetable oil, canola is ok too
- 1/2 cup cider vinegar
- 2 tbsp white sugar
- 2 tbsp dried parsley
- 1 3oz package real bacon bits, do not use the crunchy fake kind
- to taste black pepper
German Red Potato Salad
- Slice the red potatoes thinly, leaving most of the peel intact. I only slice off parts of the peel that are damaged or rough.
- Cook these potatoes in a large pot of boiling water (enough water to cover the potatoes) until they are tender but still firm. This takes about 15 minutes.
- Drain the water off the potatoes and place them in a large bowl.
- While the potatoes are cooking, place the oil, the red onions, and the bacon bits in a small saute pan. Cook until the onions are tender and somewhat translucent.
- In a medium size bowl, mix the mayo,onion-bacon mixture, sugar, vinegar, parsley, salt, and pepper. Stir together well.
- Add the mayo mixture to the potatoes and stir in to cover all the potatoes.
- Let stand for an hour so the flavors soak in. This salad is good served hot or cold. Enjoy!
