If your family likes hearty meat and vegetable dinners, this terrific recipe idea is sure to be a hit in your home. As an added benefit, it's low fat and low carbohydrate, so this dish can be the perfect choice for anyone who is watching their weight or simply making an effort to eat healthy.

Beef and Cabbage Stove Top Meal Recipe

Ingredient List:

  • 1 pound of ground sirloin or ground round
  • 1 large head of cabbage, chopped
  • 2 medium carrots, cut into slices
  • 1 medium onion, chopped
  • 1 large can of diced tomatoes (28 ounce size)

6. Return the cooked meat and veggie mixture to the pan.

8. Bring to a boil.

9. Reduce heat to medium.

10. Cover.

11. Simmer for 10 minutes, or until all vegetables are tender.

Serving Suggestion

When you're looking for the ultimate in family meal simplicity, this dish makes a great one dish meal for any occasion. If you want to add a side dish, you may want to consider serving this tasty treat alongside a serving of Irish potatoes or scalloped potatoes.

Recipe Variations:

  • If you don't feel like chopping the cabbage and carrots yourself, simply purchase a bag of coleslaw mix from the bagged salad section at your favorite supermarket. The veggies will probably be shredded more finely than if you cut them up yourself, but you'll save time and the taste will be identical.
  • If you want to kick up the seasoning a little, try stirring in a few dashes of Tabasco sauce while your meal is simmering.
  • Try substituting ground turkey or smoked sausage for the ground round or sirloin.

If you have any leftovers, place them in a casserole dish, stir in some cooked white rice, and bake at 350 degrees until it is hot and bubbly. You can expect this to take about 25 minutes.
