Quick and Easy Meatball Casserole
I have been making this meal for the family for a few years. My wife does not like to cook and I sometimes like to make something different. You can make many Substitutions for your own favorite vegetables. Just throw the ingredients into a 15" x10" x 2" Pyrex Container. Then it takes about 1 to 1 1/2 hours of baking at 350. When the meatballs are no longer pink inside it is done.

- 6 - 8 Potatoes, Peeled and Sliced
- 6 Carrots, Sliced
- 1 Onion, Chopped
- 6.5 oz. Mushrooms, cannedcanned and Drained
- 1 to 1.5 lb. Beef Sausage, Cooked cut into 1" Pcs
- 1 lb Lean Groud beef, Rolled into 1" dia.
- 1 Bag of Broccoli, Frozen
- 1 can Beef Broth, 16 oz.
- In a large bowl. Peal Potato's and cut into cubes. Peel and Slice Carrots into 1" pieces. Slice Onions and cut into quartere. Slice Sausage into 1" pieces.1 can of Mushrooms drained. Add bag of Broccoli. Place in 15" x 10" x 2" Casserole Dish. Roll 1 1/2 pounds of Lean Ground Beef into Meatballs. Place around top. Pour in Beef Broth. Cover with Tin Foil for 1 hour and remove for rest of cook time. Make sure that the Meatballs are done and carrots are soft.
- If you want to substitute use 2 Lbs of chicken Breast cut into slices. Instead of Sausage and Meatballs. Substitute Chicken Broth instead of Beef Broth, Also I have put in Fresh Green Beans Instead of Broccoli. The nice thing about this recipe is the different substitutions that can be made.
