Recipe to Make the Best Mac and Cheese
Zippy Mac and Cheese
This is a spicy version of an old comfort food. Who doesn't love Mac and Cheese? This is also a great way to sneak some veggies into your kids diets without them noticing. I bet they will even ask for seconds!
You'll Need:
1/3 cups uncooked macaroni
1 cup (8 ounces) cottage cheese
1 cup (8 ounces) shredded mozzarella cheese
1/2 cup shredded cheddar cheese (I throw a whole cup in to make it extra cheesy!)
1 teaspoon cornstarch
1 cup milk
1 small onion, grated
1/4 cup finely chopped green pepper (I throw it in the food processor and practically liquify it)
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4-1/2 teaspoon red pepper flakes (I use the 1/2 for extra spiciness!)
1/2 cup crushed cornflakes
1 tablespoon of melted butter
Here's What You Do:
Preheat the oven to 350 degrees.
Cook the macaroni according to the package and then drain it. Stir in the cottage cheese, mozzarella cheese, and cheddar cheese then set it aside.
In a large sauce pan combine the cornstarch and milk. Mix until it's smooth then stir in the onion, green pepper, mustard, salt, and red pepper flakes. Bring to a boil then stir for 2 minutes or until thickened. Pour over the macaroni mixture.
Transfer to a greased 2 quart baking dish. Crush cornflakes and mix with melted butter. Sprinkle this mixture over the top of the macaroni. Bake uncovered for 25-30 minutes or until bubbling and it's golden brown on the top.
