Let the Kids Help Make This Yummy Chicken Salad!

Kids love this salad too!

Chicken Fruity Salad

1 head Iceberg lettuce or Romaine Lettuce

1 package of Baby Spinache leaves

2 prepared boneless fried chicken tenders (at many deli's - or cook extra chicken and refrigerate the leftovers for this salad)

1 small can mandain oranges

2 tbs dried cranberries

2 tbs slivered almonds

Assemble toss the Iceburg lettuce and baby spnache leaves and place half on 2 serving plates.

Slice chcken tenders into bite-sized strips and place on top of lettuce/spinache mixture

Drain the small can of mandarin oranges and place 1/2 on top of each salad

Sprinkle 1/2 the dried cranberries on each salad

Sprinkle slivered almonds on last.

This is an easy and fun to let the kids help you assemble.

I use bottled Teriaki or Sweet & Sour dressing.

Serve with French bread or dinner rolls. Makes two services - delicious for lunch!
