Bitter Gourd Pickle - Ingredients and Method of Preparation
I am not much fond of Pickles. But I don’t mind a Bittergourd Pickle at all. I learned this recipe from a South Indian friend. Given below are the Ingredients and Method of Preparation of this Pickle.
Ingredients
- 1 CupBitter gourd cut into thin stripes
- 1 Cup Green chilli slit on one side
- 3 tsp Mustard Oil
- ½ tsp Fenugreek Seeds
- ½ tsp Mustard Seeds
- ½ tsp Turmeric
- ½ tsp Asafoetida
- 1 tsp Tamarind Puree
- 1 tsp Jaggery
- Salt to taste
Method of Preparation
Add salt to the bitter gourd pieces and keep aside.After 30 minutes squeeze bitter gourd well to remove the water. Now heat 2 tsp oil in a thick bottomed pan and fry the bitter gourd pieces. Once bitter gourd is half cooked add the green chillies and turmeric powder and mix well. When bitter gourd and chillies get a brownish color remove from Stove and allow cooling.
Heat one tsp Oil in another pan and fry fenugreek and mustard seeds in low flame. Add asafetida, jaggery and tamarind puree and remove from the stove. Grind this mixture to form a smooth paste. Add this to the bitter guord and chillies mixture and mix well. Add extra salt if required. Store the Bitter Guord Pickle in an airtight container in refrigerator. This pickle can be started using immediately and remains good for 2 weeks.
