Blueberry-Lemon Pancakes!

Yields: 3 pancakes per person serves 4 people


  • 2 cups Pancake mix
  • 1 1/3 cup water
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8-1/4 tsp lemon extract
  • 1/2 pint of fresh blueberries
  1. Mix everything in a decent size bowl. Set aside for about 15-20 minutes. Heat an electric skillet (if using) to 350 degrees. If using a skillet, heat on medium heat. Using a 1/4 cup measuring device make pancakes. If using an electric skillet make only 4 pancakes at a time. Depending on the skillet you can make 2-3. With my square sort of flat skillet I could make 4. Cook about 5 minutes on first side or golden brown. Flip and repeat on the other side. Serve immediately with maple syrup. Pancakes will not be perfectly round due to the blueberries and they might be a little smaller in size as well. Can be served with sausage, bacon, or eggs. Any of the choices would be good or for Sunday breakfast; make it a breakfast feast and make everything!
