Brinjal is also called as Eggplant. Eggplant is a low-calorie and high-fiber food that is rich in nutrients and has many potential health benefits like reducing the risk of heart disease and helps to control blood sugar and also helpful for weight loss. Eggplants can be cooked in so many ways and in so many forms like curry, fry, chutney, and bajjis. It can also be cooked with combination of other vegetables like potato, peas, etc. It is delicious and simple addition to any form of healthy diet.


Here are some Brinjal/Eggplant recipes that are very delicious and mouthwatering and very much famous in South India.


1. Stuffed Masala Brinjal Curry – It is a spicy gravy curry.

Ingredients:


Brinjals – 1/2 kg (small in size)

Turmeric Powder – 2 Tablespoons

Red Chilli Powder – 2 Tablespoons

Peanuts – 4 Tablespoons

Cloves – 2

Cardamom – 2

Marathi Moggu – 1

Cinnamon Stick – Small Piece

Sesame Seeds – 2 Tablespoons

Dry Coconut Powder – 2 Tablespoons

Coriander Powder – 1 Tablespoon

Cumin Powder – 1/2 Tablespoon

Onions – 2 (Finely Chopped)

Cumin Seeds – 1 Tablespoon

Mustard Seeds – 1 Tablespoon

Chana Dal – 1 Tablespoon

Red Chillies – 2

Green Chilli – 4

Curry Leaves – 10

Tamarind Juice – 3 Tablespoons

Jaggery – 10 Grams

Ginger – 1/2 Tablespoon (Finely Chopped)

Garlic – 5 Cloves

Tomato – 2 (Sliced)

Coriander Leaves – 1/2 Cup

Oil – 3 Tablespoon

Salt – As needed


Preparation Method:


First take a bowl and add water, turmeric powder, and salt. Take 1/2 kg of brinjals that are small in size, wash them well, and cut them into four portions. Add the cut brinjals into turmeric and salt water and keep them aside.

Now we have to prepare masala powder for the recipe. To prepare masala powder, keep a pan on the stove and light it, after pan gets heat, add peanuts and dry roast them. Now add cloves, cardamom, marathi moggu, cinnamon, sesame seeds, and dry coconut, roast them all well and take them out of the pan and keep aside. Now take a mixie jar, add roasted ingredients and add ginger, garlic, salt, turmeric powder, chilli powder, coriander powder and cumin powder and grind them well into fine powder. Transfer the fine masala powder into a bowl and keep aside. Now add finely chopped onions into masala powder and mix it well. Finally, the masala powder for recipe is ready. Now, stuff the masala powder into cut brinjals and keep them aside.

Now, take a pan, keep it on the stove, and light it. Once the pan gets heat, add oil. After the oil gets heat, add cumin seeds, mustard seeds, chana dal and fry them. Now add red chillies, green chillies, onions, and curry leaves and fry them well. Now add stuffed brinjals to it and mix it well. Close the lid and cook it for three to four minutes. Now remove the lid and mix it well and add sliced tomatoes and mix well and add remaining masala powder to it along with tamarind juice and jaggery and mix them all well. Adding jaggery will enhance the taste of the curry. Now add half glass of water to it and mix it well and close the lid and cook it for 5 minutes in medium flame until the oil comes out. After 5 minutes, remove the lid and mix it well and add coriander leaves. Now transfer the curry into serving bowl. Very tasty, spicy, yummy, and delicious stuffed brinjal masala curry is ready. You can enjoy this recipe a lot with rice or chapatti or roti.

Chana Dal – 2 Tablespoons

Urad Dal – 1 Tablespoons

Cumin Seeds – 1 Tablespoons

Dry Coconut Powder – 2 Tablespoons

Red Chillies – 10

Garlic Cloves – 10

Peanuts – 2 Tablespoons

Coriander Seeds – 1 Tablespoon

Turmeric Powder – 1/2 Tablespoon

Black Pepper – 10

Fenugreek Seeds – 1/4 Tablespoon

Oil – 4 Tablespoons

Salt – As Needed


Preparation Method:


First take a bowl and add water, turmeric powder, and salt. Take 1/2 kg of brinjals that are small in size and wash them well and cut them into four portions. Add the cut brinjals into turmeric and salt water and keep them aside.

First, we have to prepare masala powder for the recipe. For this, first take a pan, keep it on the stove, and light it. After the pan gets heat, add one tablespoon of oil and turn the flame into medium. After the oil gets heated, add urad dal, chana dal, fenugreek seeds, and black pepper and fry them for two minutes. Now add peanuts, cumin seeds, coriander seeds, and red chillies and fry all the ingredients well and transfer them into a plate. Now cool down the fried ingredients at room temperature. After the fried ingredients gets cool, take them into a mixie jar along with dry coconut powder, turmeric powder, garlic cloves, and salt to taste and grind them into a fine powder. The masala powder is ready. Transfer the masala powder into a bowl.

Now take a pan, keep it on stove, and light it. After the pan gets heat, add 3 tablespoons of oil and turn the flame into medium. After the oil gets heat, add the brinjals that are cut into four portions, cover the pan with lid, and cook them for 4 to 5 minutes. After 5 minutes remove the lid and stir them well and again close the lid and cook them for 15 minutes, but remember to stir them in-between so that they cook well and become soft. After 15 minutes, by using the fork check whether brinjals cooked well or not. Once brinjals cooked, turn off the flame and transfer the cooked brinjals into a plate and let them cool at room temperature for 15 minutes. After 15 minutes, stuff the brinjals with masala powder. Now take a pan and keep it on stove and light it, add 1 tablespoon of oil, stuffed brinjals, and remaining masala powder and mix them well and cook for 1 minute on low flame by covering the pan with a lid. After 1 minute, turn off the flame, remove the lid, mix the fry well, and transfer it into a serving bowl. Tasty, spicy, and delicious stuffed masala brinjal fry is ready to taste. It tastes rich when it is hot.
