Brinji Rice Recipe

Brinji Rice Recipe - Ingredients and Preperation Method
Ingredients for Brinji Rice
- 2 Cups of Basmati Rice
- 4 tsp Butter
- 1 Cup finely sliced Onions
- 2 Green Chillies slit lengh wise
- 2 Cup Vegetables (Carrot, Beans, Green Peas)
- 2 Chopped Tomatoes
- 1 tsp Sombu
- Cashewnuts
- Bay Leaves
- Curry leaves
- Chopped Coriander Leaves
- 6 Elachi
- 6 Cloves
- 2" Chinnamon broke into 2
- 1/4 Cup Mint Leaves
- 2 tsp Ginger- Garlic Paste
- Salt
Method of Preperation of Brinji Rice
Wash Rice throughly and drain the water. Heat Butter in a Kadai and fry the rice in low heat for around 10 minutes and empty the contents into a Pressure Cooker. Now add Oil t the Kadai add the Onions and fry for 2-3 minutes and after that add the Vegetables and tomatoes and fry for a few more minutes and then add the rest of the ingredients and continue to fry till a nice smell arises. Once done add this mixture to the Rice in the Cooker and add the required quantity of water and cook the rice. Once done remove from heat and add coriander leaves and fluff the rice well. Serve with Raita and Papads.
