Bronco Stew
Easy beef stew
Ingredients
- 2 pounds (910 g) Round beef, Ground
- 1 tablespoon Olive oil
- 1 (16 ounce) package (455 g) Onion and been peppers, Chopped
- 1 (14 ounce) can (400 g) Beef broth
- 1 (1 ounce) packet (30g) Taco seasoning
- 2 (15 ounce) cans (425 g) Mexican stewed tomatoes
- 2 (15 ounce) cans (425 g) Pinto beans with jalapenos
- 1 (16 ounce) package (455 g) Velveeta cheese, Cubed
- 1 (13 ounce) package (370 g) Tortilla chips, Crushed
Instructions
- Brown beef on all sides in Olive oil in the Stew pot on high heat and stir often.
- Add onion and bell peppers, and cook for 3 minutes.
- Add broth and taco seasoning, reduce heat and simmer for 35 to 45 minutes or until most liquid evaporates.
- Stir in tomatoes and beans and heat just until mixture is thoroughly hot. Add cheese and stir until cheese melts.
- Place about 3/4 cup (40 g) crushed chips in bottom of individual soup bowls, spoon Stew over chips and serve immediately
