Chinese Peking Duck Salad

PEKIN DUCK SALAD

I'm 100% in love with chinese food, i can't get enough of it. I eat too many take aways, but also like to cook chinese food myself at home. My favourite meat has changed from chicken to duck, I discovered i like duck after ordering the chinese takeaways duck in black bean source and duck in plum sauce. I am def addicted to duck. Here is a little recipe for a pekin duck salad. I hope you enjoy making it, and feel free to leave me any comments afterwards. ~ Kind regards

SERVES 4

YOU WILL NEED:

* 1/2 of a pekin duck or 2 duck breasts

* 450g/ 1 lb of fresh hokkien noodles

* 5 tbsp bottled hoisin sauce

* 1 small cucumber

* 4 spring onions, sliced diagonally

METHOD:

Firstly roast and cool the duck breasts, if using remove the crisp skin from the pekin duck or roasted duck breasts and cut it into thin strips, then slice the meat and set both aside separately. Next rinse the noodles under some lukewarm water to separate them, then let them drain. Meanwhile, mix the hoisin and plum sauces together in a bowl and add the noodles after any excess water has dripped off. Add the duck skin to the bowl and stir together. Next cut the cucumber in half lengthways, then use a teaspoon to scoop out the seeds. Cut into half moon slices and add to the noodles. Add the spring onions to the bowl next. Then use your hands to mix all the ingredients together so they are coated with the sauce. Finally transfer the noodles to a large platter and arrange the duck meat on top
