CHOCOLATE AND THE FULL MOON
Microwave Brownie Pie
Although I'm past the age of worrying about a "monthly" inconvenience, I find I still have those cravings. I finally realized it coincided with the waxing of the moon, the runup to Full Moon every month, and it's the same old craving! You got it! Chocolate!
One of my favorite brownie recipes is a quickie; like most of my favorites I consider it a "Lazy Gourmet" recipe. It was submitted by Jacki Carpenter Thigpen for the 1990 "Recipes for Creative Living" cookbook published by the John C. Campbell Folk School in Brasstown, N.C.
Only 20 minutes overall: 5 minutes to toss the ingredients in the bowl and mix 'em up, 15 minutes to cook. Yum!
Microwave Brownie Pie
1 cup sugar (I mix brown and white)
1/4 cup cocoa ( the real stuff not powdered mix)
2 eggs
1/2 cup chopped nuts
1/2 cup flour
1/2 cup butter melted
1 teaspoon vanilla
Mix all ingredients in a bowl for 3 minutes. Spread in a 9" glass pie plate. Microwave on high power for 7 minutes, then medium power for 6 minutes. Serve with ice cream or whipped topping.
