It is also rich in vitamins B1, B2, C, D and E which are antioxidants that reduce free radicals cell damage and heal and nourish the skin. It also has potassium, magnesium, vitamin B6, thiamine, Folic acid, iron, copper, phosphorus and sulphur. Carrot Rice is a very delicious and nutritious recipe made using Carrots.

Ingredients of Carrot Rice
2 cups Basmati Rice
2 medium onions chopped
6 carrots grated
2 tsp fried groundnuts
cinnamon sticks
ΒΌ tsp cloves
1 tsp mustard
1 tsp Black gram
1 tsp Bengal gram
Coriander leaves
Curry leaves
Oil (as required)
Salt as per taste
Ingredients for making Spice or Masala Powder
1 tsp coriander seeds
1/2 tsp cumin seeds
2 tsp grated coconut
2 dried red chilies
Method of Preparation of Carrot Fried Rice
Cook the basmati rice and let it cool. In the meanwhile, grind the fried groundnuts into a fine powder and keep aside. To make the masala or spice powder for Carrot Rice, heat oil in a pan and add red chilies, coriander seeds, cumin seeds and fry till it turns brown. Now add the grated coconut and remove from heat. Once it is cool grind the mixture. Heat Oil in a thick bottomed Kadai and add cloves, cinnamon, mustard, black gram and Bengal gram and fry it for 2-3 minutes. Now add Onions and curry leaves and cook till the onions are soft. Now add the grated carrots to the mixture and cook till the carrots are cooked. Add salt and the prepared masala and mix well. Finally add the cooked rice and groundnut powder without mashing it. Remove from the heat and Serve hot with Papad and spicy gravy.
