Carrot Halwa, Aka the Gajar Ka Halwa!
Ingredients, that makes it sweet
*Grated carrots -2 cups
*Milk -3/4 cup
*Sugar -1/4 cup
*Cashew nuts -10
*Cardamom Powder - 1/4 tsp
*Ghee - 2- 3 tbsp
*Raisins -2 tbsp
*8-10 unsalted roasted almonds
Instructions, the process
- Wash and peel the carrots and grate them or grind them. Grating leaves some texture to the carrot at the end but grinding is equally good too.That gives a different texture. However you can coarsely grate the carrots in mixer too, it will give more soft texture.
- Add the grated carrots, milk and water to a pressure cooker pan. Mix well and pressure cook for 2 whistles – about 7-8 mins. Turn off flame and let the steam release on its own.
- Meanwhile in a wide open pan add ghee and all the dry fruits. roast it for one minute.
- After a while, heat the milk in the same heavy bottomed pan and add the carrot to it.
- When it starts to boil,...yes! just then turn down the flame. Keep stirring to avoid sticking until it gets thick.
- After about 15-20 minutes, when all the milk is absorbed by the carrot, add sugar and stir continuously. Now your gajar ki kheer has turned into gajar ka halwa!
- Just seasoning left. Add cashew nuts, raisins, cardamom powder, mix well and cook for another 2-3 seconds.
What to expect
For A change...
- Add a few drops of vanilla to give it a different flavour that you may like.
- You can also add khoya, pistachios, almond etc.
- It will taste good even if much of milk still remains in liquid form.
- And for a complete turn to the taste...add grated strawberries or pineapple juice!
