Carrots - Fried in Butter
Thought I should do something with the carrots. A friend cooks canned carrots with butter and brown sugar so I felt that frying them would get me into the ball park. Mine, are of course, raw.
Heat up the butter. While that's heating, I throw in one carrot. I can hear it, and once it's bubbling around the one carrot I toss the entire bag. Nothing like that instant sear. Then it's just jiggle the pan occasionally. After a bit, I put the brown sugar on the top, and let everything just merge. Takes about 15 minutes.
Then, dump on a plate and munch away. Careful, they are quite hot, fresh from the stove.
The flavor is almost like candied yams. Sweet, chewy, like something you would try at the state fair...which I don't attend, so perhaps is a bad comparison...
