Cauliflower Soup recipe

This is a good vegetable soup recipe, using cauliflower. I don't really know of too many good recipes for this vegetable, so this one is popular with me.

You will need to use a blender or food processor to make this soup.

Makes 8 servings

INGREDIENTS

 
 
3 cups water
1/2 teaspoon celery salt
1 medium head cauliflower
1/4 teaspoon salt
1 medium onion, sliced
1/8 teaspoon pepper
2 tablespoons butter or margarine
1 cup half and half
2 tablespoons flour
ground nutmeg
1 tablespoon instant chicken bouillon
 

DIRECTIONS

Separate cauliflower into flowerets.

Heat 2 cups of water to boiling in large saucepan. Then add cauliflower and onion. Cover and simmer until tender, about 10 minutes. Do not drain.

Pour vegetables and water into blender, cover and blend at high speed until smooth. You could also use a food processor for this.

Heat margarine in the large saucepan until melted. Stir in flour and cook, stirring constantly, until mix is smooth and bubbly, remove from heat.

Stir in last cup of water, return to heat and heat to boiling, stirring constantly. Boil and stir for 1 minute.

Stir in cauliflower mix, bouillon, celery salt, salt and pepper, heat just to boiling.

Then stir in half and half, heat just until hot, not boiling.

Serve immediately, sprinkle each serving with nutmeg
