Big Pine Lodge Parmesan Chicken


Chicken for Two

Preheat oven to 350 degrees

Line an 8 x 8 pan with foil and spritz it with Pam or grease it with butter.

Place 2 boneless chicken breasts in pan and salt lightly.

Mix together 3 tablespoons melted butter, ⅓ cup French fried onions, ⅓ cup Stovetop stuffing mix and ⅔ cup parmesan cheese. Add water till moist (about ⅓ to ½ cup)

Pat mixture onto chicken breasts till covered and bake for 45 minutes. Check chicken for doneness then sprinkle with mozzarella cheese and return to oven for 5 minutes (you can turn off oven and make your side dishes while cheese is melting). This recipe serves 2. If you make a large pan of a dozen or so chicken breasts, increase the time to an hour or the temperature to 375.

      Jane, I love my slow cooker, too, and usually do whole chickens in it. Let me know how it turns out. I'm off to post a slow cooker recipe for pot roast.
