Chick Peas and Peppers: A Recipe

Chick peas are a simple and versatile food that you need to have on hand so that you can prepare a variety of healthy and tasty foods in a jiffy.

Tips, buy canned beans when they are on sale so you can have them handy for use. Be sure to rinse beans thoroughly and after rinsing, drizzle some lime or lemon juice over them before using. This adds flavour.

Chick peas can be served either hot or cold.

Chick Pea and Peppers

Ingredients:

¾ cup chick peas

1 tbsp olive oil

1 med onion chopped

1 zucchini chopped

1 red and 1 yellow pepper chopped

3 gloves garlic crushed

Sea salt and cayenne pepper to taste

1/3 cup tomato paste

Preparation

In large bowl, cover chickpeas with 6 cups (1.5 L) cold water; cover and let soak for at least 8 hours or up to 24 hours.

Transfer chickpeas and liquid to large saucepan; bring to boil.

Reduce heat, cover and simmer until chickpeas are tender, about 1 hour.

Drain and transfer to bowl of cold water.

Rub chickpeas between hands until skins float to surface of water. Skim skins off the top and discard. Drain and set aside.

In large pot, heat oil over medium heat; fry onion, stirring occasionally, until golden, about 5 minutes. Add zucchini, red and yellow peppers, garlic, cumin, cinnamon, coriander, salt and cayenne pepper; fry until vegetables are tender-crisp, about 4 minutes.

Add tomato paste; fry, stirring, until paste is slightly darkened, about 2 minutes. Add tomatoes, breaking up with spoon and scraping up brown bits. Stir in chickpeas and lemon; bring to boil. Reduce heat, cover and simmer for 10 minutes. Stir in coriander.

Makes 4 servings.

Four Bean Salad

Ingredients:

3/4 lb green beans sliced

3/4 lb yellow wax beans, sliced

1 1/2 cups Thawed frozen baby ima beans

1 can chickpeas rinsed and drained

2 small red onions thinly sliced into rings

1/4 cup olive oil

1 1/2 tablespoons apple cider vinegar

2 teaspoons Dijon mustard

Preparation:

  1. Steam the green, wax, and lima beans 10 minutes, or just until crisp-tender.
  2. Plunge into cold water and drain.
  3. Place in a bowl with chickpeas and onions.
  4. Whisk together the oil, vinegar, and mustard, and add salt and freshly ground pepper to taste.
  5. Drizzle over the beans and onions and toss to coat.
  6. Salad can be served at room temperature or chilled.

Chick peas can even be your dessert. Drain and wash a can of chick peas, add some grapes and raspberries (strawberries and blueberries work as well) drizzle with lime and lemon jucie and enjoy.

If you are planning ahead this dessert works best when chick peas are marinated with lime or lemon juice and kept cool for three hours before serving. You could make them the night before and put in yoru fridge until needed.
