Chicken Spiedini

Ingredients

  • 8 oz. Chicken cut up into 1 to 2 inch chunks
  • 1/3 cup italian salad dressing
  • 1/4 cup italian seasoned bread crumbs
  • 3/4 cup lemon and butter sauce
  • 1/4 cup diced prosciutto ham
  • 1/4 cup shredded blend of italian cheese

Instructions

  1. Combine chicken and salad dressing in a resealable plastic bag and marinate for 2 hours.
  2. Prepare medium fire in grill.
  3. Thread chicken onto skewers and dust with seasoned bread crumbs.
  4. Grill over medium heat until juices run clear when pierced.
  5. Bring lemon & Butter sauce to a simmer over low heat.
  6. Add prosciutto ham and simmer.
  7. Remove chicken from skewers to a plate.
  8. Top with cheese and cover with lemon & Butter sauce. Garnish with additional cheese.
  9. Enjoy

      Thanks for stopping by Realhousewife there is a place on Lemay Ferry, Rizzo's Italian Restaurant, and it has the best Chicken Spiedini I have ever eaten. It is located at 4460 Lemay Ferry. If you ever get the time you oughta check them out.

      Doing this tomorrow with our favourite salad. My 17 year old son has just read it too and said 'oooh can we have some?' Lovely and simple enough to make after a long day at work. Thanks - saved my brain from thinking of what to do for tea (dinner I guess) tomorrow
