Chicken With Orange and Honey Glaze

This is a great recipe if you are a fan of wraps. Choose your favourite wraps, flatbread, pitta bread, soft tortillas, naan bread, chapattis or pancakes add to this recipe.

SERVES 2

YOU WILL NEED:

* 1 Small orange

* Small piece of fresh root ginger

* 2 tsp soy sauce

* 2 tsp clear honey

* 1 tsp cornflour

* 4 spring onions

* 2 boneless, skinless chicken breasts

* 1 tbsp oil

1) Finely grate the orange rind, halve and squeeze out the juice. Finely grate enough ginger to make about 1 tsp. Combine the orange rind and juice with the ginger, soy sauce, honey and cornflour, mixing well

2) Slice the spring onions. Thinly slice the chicken.

3) Heat the oil in a frying pan. Add the chicken and cook quickly, stirring occasionally, until golden brown and cooked through

4) Remove the pan from the heat and add the spring onions. Stir the orange mixture and add it to the pan. Return the pan to the heat and, stirring continuosly, heat quickly until the sauce bubbles, thickens and coats the chicken.

5) Heat your chosen wraps, fill and serve

      Wraps are great today and certainly more interesting that plain old sandwiches. This sounds really good with a touch of sweetness. Of course I like anything healthy sounding (within reason). I am giving it a thumbs up.
