Definition of Skillet Cooking

A frying pan, fry pan, or skillet is a flat-bottomed pan used for frying, searing, and browning foods. It is typically 200 to 300 mm (8 to 12 in) in diameter with relatively low sides that flare outwards, a long handle, and no lid.

Chicken and Mushroom Skillet

I learned how to cook from the best of the best. My loving father taught his five kids how to cook at a very young age. The art of cooking has become one of my biggest passions in life. The best lesson I've learned in my cooking endeavors, is not to be worried about exact amounts or work too hard. When I look for recipe's, I take what I like-add ingredients that sound good to me, and throw out the rest. I believe cooking is healing and should be fun. Hopefully, this chicken recipe I tweaked will be enjoyable for you and your family.

Ingredients

  • 6-8 Chicken Breasts, Skinless, Boneless
  • Salt/Pepper, To Taste
  • 3 Tablespoons Butter, Diced
  • 3 Cloves Garlic, Minced
  • 8 Ounces White Mushrooms, Sliced
  • 2 Cups Flour
  • 1 Cup Chicken Broth
  • 1/2 Teaspoon Dried Thyme
  • 1/2 Teaspoon Dried Oregano
  • 1/2 Teaspoon Dried Basil
  • 1/4 Cup Milk, (Skim, 1%, 2% or Heavy Cream)
  • 1/4 Cup Grated Parmesan
  • 2 (15) Ounce Cans White Potatoes, Sliced
  • 1 Medium White Onion, Diced

Instructions

  1. Rinse chicken breasts with water and pat dry with paper towel.
  2. Season chicken breasts by mixing salt, pepper and flour in large zip lock bag.
  3. Add chicken breasts to zip lock bag and shake. (Be sure to coat both sides).
  4. Melt 2 tablespoons butter in a large, heavy duty skillet on medium high heat.
  5. Sear both sides of chicken until golden brown, about 2-3 minutes per side; set aside.
  6. Melt remaining 1 tablespoon butter in skillet. Add garlic, diced onions, mushrooms, salt and pepper, and cook, stirring occasionally until tender and browned, about 5-6 minutes;
  7. Stir in chicken broth, thyme, oregano and basil.
  8. Return chicken to skillet and heat to boiling; immediately turn down to simmer.
  9. Add milk, parmesan and sliced potatoes.
  10. Place cover on Skillet; Simmer chicken for 25-30+ minutes. The longer the more tender.

I found this chicken entrée by looking through several online recipe's. I learned to cook as a young girl from my loving father. He taught me not only how to cook, but how to tweak recipe's you find, and make them your own. That's how I came up with this delicious chicken skillet recipe.

*Note* I usually serve dinner rolls and green beans with this chicken dish.
