Chili Verde Con Carne
Pork subsitute
Ingredients
- 3 pounds (1.4 kg) Sirloin or tenderloin, Cubed
- 1/2 cup / 1 stick) (115 g) Butter
- 2 Medium Yellow onions, Chopped
- 6 cloves Garlic, Minced
- 10 whole Green chilies, Peeled, seeded, chopped
- 1 tablespoon (15 ml) Cumin, Ground
- 2 teaspoons (10 ml) Oregano
Instructions
- Brown sirloin with butter in a large skillet pan. Reduce heat to low and add all remaining ingredients plus 1 cup (250 ml) water, and 1 teaspoon (5 ml) of salt and pepper. Cover and simmer for 3 hours.
- Stir occasionally and add 1/2 to 1 cup (125 to 250 ml) water if necessary. Remove cover, taste for flavor and add seasonings, if needed.
Chili Verde Con Carne
"Chili con Carne" means chili with meat. Verde refers to the fresh green chilies. To save time, use chili powder instead of roasting fresh green chilies. However, the flavor of fresh chilies is the secret to the best chili! Serve with pita bread, shredded cheese and green onions.
