Pecan Pie Directions

  1. Preheat oven to 350 degrees
  2. In a large mixing bowl, blend light corn syrup, packed brown sugar, melted butter and vanilla extract until thoroughly mixed
  3. Add the slightly beaten eggs to the mixture and continue to blend until thoroughly combined
  4. Pour pie mix into the deep dish pie shell
  5. Add any broken pecan pieces to the pie first, these will sink into the pie so it will taste amazing but will not affect the look on the top of the pie
  6. Place the intact pecan halves around the perimeter of the pie filling and continue inward until the whole pie is covered with pecans. *See picture
  7. Cover the pie crust with aluminum foil strips and bake for 30 minutes
  8. Carefully remove the aluminum foil from the crust edges (the pie filling will be extremely hot and runny at this point)
  9. Continue to bake for an additional 30-35 minutes or until pie is browed and bubbly
  10. Allow to cool for 2+ hours on a wire rack then, refrigerate

Roasting pecans:

  • Spread the pecan halves in a single layer on a microwavable plate and cook in microwave oven for 1 minute
  • Turn pecan’s over once and cook for an additional 1 minute
