Coconut Macaroons

Coconut Macaroons are probably one of the easiest cookies that you can make and they only have few ingredients.

Yields: 20 cookies

Ingredients

  • 1 1/4 cups coconut flakes
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 2 large egg whites
  • 1/8 teaspoon salt
  1. Preheat oven to 325 degrees and adjust the oven rack to the middle position. Line a baking sheet with silicone baking mat or lightly spray with nonstick cooking spray. In a small bowl combine the coconut, sugar, flour and salt. Add the egg whites and mix.
  2. Drop heaping teaspoons of the batter onto the baking sheet spacing them about 1/2 inch apart. Bake until cookies are light golden brown, about 20 minutes. Cool the cookies on the baking sheet for about 2 minutes then place on a wire rack to cool.

      Me too moonlake. I have already gained 5 pounds from eating them. That's the only part of baking I don't like. I used half sweetened and half unsweetened (not as moist) coconuts in the gluten free version the other day and I like it much better. It's not as chewy. But they taste great either way.

      You are absolutely correct Emeraldgreen21. Thank you for bringing it to my attention. These macaroons are NOT gluten free because they contain flour. The summary was for my gluten free version of these macaroons which I will be posting soon.

      Are you sure these macaroons are gluten free? All purpose flour contains between 10% and 12% gluten.
