Coconut Macaroons are probably one of the easiest cookies that you can make and they only have few ingredients.
- 1 1/4 cups coconut flakes
- 1/2 cup sugar
- 2 tablespoons all-purpose flour
- 2 large egg whites
- 1/8 teaspoon salt
- Preheat oven to 325 degrees and adjust the oven rack to the middle position. Line a baking sheet with silicone baking mat or lightly spray with nonstick cooking spray. In a small bowl combine the coconut, sugar, flour and salt. Add the egg whites and mix.
- Drop heaping teaspoons of the batter onto the baking sheet spacing them about 1/2 inch apart. Bake until cookies are light golden brown, about 20 minutes. Cool the cookies on the baking sheet for about 2 minutes then place on a wire rack to cool.
