Basic Pizza Dough

1 1.4 Oz Package of Dry Yeast Either Regular Or Rapid Rise

1 Teaspoons Salt

5 Cups Of Bread Flour

3 Tablespoons Extra Virgin Olive Oil

Measure out 1 3/4 Cups of Warm Water ( Warm Not Hot ) and sprinkle the yeast on top of the water to activate the yeast.

Put the salt and 2 cups of flour into the food processor. Pulse to blend. Pour in the yeast and water and pulse to blend well. Add the olive oil. Add the remaining flour 1 cup at a time pulsing and scraping down the sides with a rubber spatula until well blended. As soon as it is well blended dump it out onto a floured surface and knead at least 15 times until the dough is smooth and elastic.

Put the dough into a large greased bowl and turn to make sure all sides are covered. Cover with plastic wrap. Allow the dough to rise 45 minutes until the dough is at least doubled in size. Then punch it down Divide it in half and each half will make a 12 inch Pizza. Place your dough in the refrigerator for at least 24 hours before you roll it out and make your Pizza.

1. You need to make the Pizza Dough the day before that you find the recipe for above.

2. Corn Meal For Dusting

3. One 8 OZ Package Cream Cheese

4. 1 Cup Mayonnaise , ( Dukes Brand If You Can )

5. 1/2 Cup Very Well Drained Collard Greens

6. Cook one large ham hock and remove the meat from the bone and set aside

7. 4 Slices of Bacon Fried Done but not quite crisp

8. 1 Cup Shredded Mozzarella Cheese

9. 1 Cup Marinara Sauce

You want to pre-heat your oven to 450 degrees

Roll out the Pizza Dough into a 12 inch circle. Place on a cornmeal dusted Pizza Pan and turn up the edges slightly. To create a ridge around the Pizza.

In a bowl combine the cream cheese, mayonnaise, and 1/2 cup of the marinara sauce. Stir together very well and then spread over the Pizza Crust. Top with the collard greens, ham hock meat, and bacon. Cover with the cheese and spread around dollops of the remaining marinara sauce over the top of the pizza.

Bake for 16-18 minutes until the cheese is bubbly and the crust is light brown. And you have now made the best pizza you will ever eat which is, Collard Green And Ham Hock Pizza.
