Cranberry Nut Banana Bread
There are a lot of different things you can do with banana bread. This is a delicious one where you can use up your left over cranberries. It makes this bread look so pretty and we know we eat with our eyes.
It's also a good gift. Gifts of food, especially home made gifts are really appreciated. You can make smaller ones in different shaped pans, wrap them up in cellophane and top it with a pretty red bow and you have a wonderful Christmas present.
You can also make them ahead of time and freeze them, they freeze really well, just make sure you wrap them good and tight.

Ingredients
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 bananas, mashed
- 1/2 cup butter, softened
- 2 eggs
- 3/4 cup white sugar
- 1/4 cup dark brown sugar
- 1/4 teaspoon vanilla
- 1 tablespoon Ameretto
- 1/4 cup cold water
- 1 cup cranberries, chopped
- 3/4 cup walnuts, chopped
Directions
- Preheat oven to 350 degrees. Grease 2 loaf pans. Stir together the flour, soda and salt; set aside. In a small bowl beat bananas until almost smooth; or mash with a fork.
- In a large bowl cream the butter and the sugars. Beat in the eggs one at a time until light and fluffy. Beat in vanilla, Amaretto and bananas.
- Add flour mixture to banana mixture; beat just to blended well. Add water, beat to blend. Stir in cranberries and walnuts.
- Turn into grease loaf pans. Bake at 350 degree preheated oven for45 to 50 minutes or until a toothpick comes out clean when inserted in the bread. Let cool for 5 minutes then loosen and turn out of pans to cool further.
