Cranberry Nut Banana Bread

There are a lot of different things you can do with banana bread. This is a delicious one where you can use up your left over cranberries. It makes this bread look so pretty and we know we eat with our eyes.

It's also a good gift. Gifts of food, especially home made gifts are really appreciated. You can make smaller ones in different shaped pans, wrap them up in cellophane and top it with a pretty red bow and you have a wonderful Christmas present.

You can also make them ahead of time and freeze them, they freeze really well, just make sure you wrap them good and tight.

Bananas have a lot of potassium and cranberries offer anti-antioxidants and anti-inflammatory and anti-cancer health benefits.

Yields: Makes 2 loaves


  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 1/2 cup butter, softened
  • 2 eggs
  • 3/4 cup white sugar
  • 1/4 cup dark brown sugar
  • 1/4 teaspoon vanilla
  • 1 tablespoon Ameretto
  • 1/4 cup cold water
  • 1 cup cranberries, chopped
  • 3/4 cup walnuts, chopped


  1. Preheat oven to 350 degrees. Grease 2 loaf pans. Stir together the flour, soda and salt; set aside. In a small bowl beat bananas until almost smooth; or mash with a fork.
  2. In a large bowl cream the butter and the sugars. Beat in the eggs one at a time until light and fluffy. Beat in vanilla, Amaretto and bananas.
  3. Add flour mixture to banana mixture; beat just to blended well. Add water, beat to blend. Stir in cranberries and walnuts.
  4. Turn into grease loaf pans. Bake at 350 degree preheated oven for45 to 50 minutes or until a toothpick comes out clean when inserted in the bread. Let cool for 5 minutes then loosen and turn out of pans to cool further.
