Culinary Content: Soup Recipes I - Chestnut, Potato, Mushroom and More
Culinary Content is a regular feature in my column here at Hubpages where I share the delicious recipes and food related articles I have come across in my travels online. This time, we are exploring soups! Take a look at the lively Latin Tomato and Mushroom Soup, two different chestnut soups (one with parsnips and orange, and another hearty winter chestnut soup with potatoes), and a very unusual Potato, Fennel & Caraway Soup. I'm a huge fan of mushrooms and I also like Mexican food, so this Latin Tomato and Mushroom Soup from We Heart Food looks very tasty with flavorful peppers, a thin broth, and crunchy tortilla strips to top it off.
I would never have thought to use chestnuts in soup, but this Chestnut, Parsnip, and Orange Soup from Mostly Eating is not only original but also sounds very exciting. Have you ever had parsnips? I know for a fact that chestnuts compliment parsnips very well, and to add the citrus sweet zing of oranges to this winter soup would be perfect. Sophie says of it: "Full bodied is the most fitting description I can conjure for this soup. My other half raved about it for its deep, near meaty flavour and for myself, well I can't resist a roast parsnip and the nutmeg, orange zest and yogurt topping adds [a] bit of freshness."
And here's another chestnut soup! Chestnut Potato Soup from What's for Lunch, Honey? looks like a perfect winter soup. I am a huge fan of potato soup in the first place, and I imagine that the nutty flavor of chestnuts would bring a potato-based soup to delicious new heights. Meeta says of it: "A soul-warming and simply aromatic soup made of fine potatoes and nutty chestnuts. It is paired with sweet and sour apples to give a fantastic harmony of flavors. This is no ordinary potato soup! It has been refined and jazzed up with fine herbs and vegetables and elegantly topped off with cream making it simply perfect to start any meal off." I'm going to have to investigate this chestnut soup phenomenon, it sounds fantastic.
And speaking of potato soups, one wouldn't normally think of them as sweet or having a licorice flavor, but this Potato, Fennel & Caraway Soup from Greedy Gourmet sounds enticing! Potato soups are often a great base for a creamy soup that doesn't use any dairy for vegans or the lactose intolerant, and I'm sure this soup is no exception.
