Fish house fish are usually coated with a salty flour mixture and boiled in oil for at least 2 minutes, if not 4 minutes.
For the boiling oil, I really like the deep frying appliance we currently use. Ours is a 4 piece unit. The holder, the oil holder, the immersion heater, and the wire basket.
I use FryMagic seasoned coating mix. Upon occasion we mix it with Shire Lunch Cajun flavor, since the Cajun adds a little bite to the mix with it's hot pepper flavor.
We like some of the Zatarans Seasoned coating mixes as well, although the FryMagic wins most.
