Delicious Cornbread Salad
A Layered Southern Creation
Cornbread salad is an American dish with southern roots. It is prepared with cornbread, vegetables, and other ingredients. Typically this dish is served chilled in a glass bowl or dish. It is often layered but can be served all mixed in together. Cornbread is the base for this salad. It can be a colorful dish when you use a variety of colorful vegetables such as cucumbers, tomatoes, onions, scallions, and peppers. It also incorporates mayonnaise, ranch dressing, or sour cream to moisten the salad.
This is a delicious side item for fried chicken or pork chops and good ole southern style greens. Enjoy!

Ingredients
- 1 6 oz box cornbread mix
- 1 12 oz package bacon
- 1/2 cup sweet pickle relish
- 1/2 cup sweet pickle juice
- 2-3 large tomatoes, chopped
- 1 large bell pepper, chopped
- 1 large Vidalia onion, chopped
- 1 cup mayonnaise, (a little more or less to taste)
Directions
- Prepare the cornbread according to the package directions. Cool so that you can touch it. Crumble the cornbread into small pieces in a large bowl.
- Cook the bacon until crispy. Drain the grease off. Crumble the bacon up into pieces.
- Use a large glass bowl and layer the crumbled cornbread, 1/2 the pickle relish, juice, tomatoes, pepper, onion, bacon, and mayo. Repeat the layers. (Reserve a little bit of the tomatoes and bacon to garnish the top.)
- The ingredients can be mixed all together if you prefer -- same delicious taste, less work. Enjoy this with some southern fried chicken or pork chops and serve with greens. YUM!
