Delicious Family Recipe of Chicken Pot Roast

Ingredients
- 1 full chicken, cut into bite size pieces
- 2 teaspoons chicken spice
- 2 teaspoons garlic & ginger paste
- 1 teaspoon tumeric
- 1 full onion, chopped
- 1 teaspoon jeera/cumin seeds
- 4 sprigs of coriander
- 3 potatoes
- 6 tablespoons vegetable/olive oil
- 1 sprig curry leave

Instructions
- Add the oil to a thick base pot pan ensuring stove is at a moderate heat
- Now the braising begins, put in your chopped onions and jeera/cumin seeds (for much more intense flavour it is best to grind your spices), wait to hear that wonderful sizzle and pungent spicy aroma travelling out the pot
- Put in your salt, tumeric, garlic and ginger, stir in making sure all ingredients merge together
- Next put in your chicken, toss it in so that all parts are well marinated, then sprinkle on your chicken spice
- After 15 minutes of the Chicken slow cooking in its juices and spices, put in your sprig of curry leave and potatoes that sliced into 4
- Allow the slow cooking process adequate enough to soften the potatoes, and lastly sprinkle your chopped coriander leaving at least one sprig to garnish
- Switch the stove off after 30 minutes and leave to simmer, until ready to eat
