Delicious Vegetable Sandwiches
I would bet you that the Earl of Sandwich who was the inventor of sandwiches never thought of the delicious vegetable sandwiches you will find on this page. And if your thinking that vegetable sandwiches can't possibly be tasty and delicious you would be wrong. Because the vegetable sandwiches on this page are really tasty and oh so delicious.
Grilled Portobello and Roasted Red Pepper Sandwich Recipe
Portobello Mushrooms make really interesting and delicious sandwiches. And here we add roasted red peppers and feta cheese and that just makes it into one of the most delicious sandwiches you will ever eat in your life.
For your sandwiches you will need to purchase a large package of portobello mushrooms and you will want to slice them cross ways into large slices and place a little extra virgin olive oil into a skillet. Now place your portobello mushroom slices in the skillet and sprinkle with garlic powder , salt , and pepper and fry the portobello mushrooms until tender. Remove from the skillet and place on paper towels to drain.
Now you will want to have purchased a good loaf of bread from your supermarkets deli section to make your sandwiches with. Now you will need.
1. A package of Feta Cheese.
2. Balsamic Vinegar.
3. Basil Pesto.
4. A bag of cleaned , washed and drained baby spinach leafs.
5. A Jar of Roasted Red Bell Peppers.
6. Salt and Pepper to taste.
Put your sandwich together starting with placing a layer of your cooked portobello mushrooms on the bottom of the slice of bread and sprinkle with the balsamic vinegar. Now place on a layer of your baby spinach leafs and sprinkle on a layer of feta cheese. Now place a layer of well drained roasted red bell peppers. On your top piece of bread place a layer of Basil Pesto and cap your sandwich with it. But before you cap your sandwich sprinkle on salt or pepper if you like.
Basil Pesto Recipe
Here is a little different version of basil pesto which is oh so delicious. Notice in this version we use English Walnuts instead of Pine Nuts.
1. 2 Cups Fresh Basil Leafs.
2. 1/2 Cup Freshly Grated Parmesan Cheese.
3. 1/2 Cup Extra Virgin Olive Oil.
4. 1/2 Cup Shelled English Walnuts.
5. 1 Tablespoon Fresh Minced Garlic.
6. 1 Teaspoon Salt.
7. 1 Teaspoon Ground Cayenne Pepper.
Place all of the above ingredients into a food processor and puree smooth. What you don't use on your sandwiches will be delicious served hot on your favorite pasta. I do not like pine nuts so years ago I started making this version of basil pesto which is oh so delicious.

Here is another great sandwich that the Earl of Sandwich would have loved because it is one of my all time favorite sandwiches. I love tomato sandwiches and when you add feta cheese and basil pesto well you have one of the most delicious sandwiches you will ever taste. You do want to go the extra effort of shopping around to find a loaf of sourdough bread to make this delicious sandwich with. And above is the recipe for the basil pesto.
1. A loaf of sourdough bread.
2. Tomatoes sliced thin.
3. Feta Cheese Crumbles.
4. Basil Pesto , recipe is above.
You will want to start with two slices of sourdough bread. Spread a thin layer of basil pesto on each side and then add your tomato slices and feta cheese. Grill your sandwich in a skillet with margarine or butter until golden brown. And serve at once. I sometimes add very thin slices of purple sweet onion to this sandwich for a extra tasty crunchy sandwich. With or with out the onion it is truly one of the best sandwiches you will ever eat.
