Easy Beef and Vegetable Stew
It was a rainy, gloomy Sunday and nothing sounded better than a big pot of stew.
With only six ingredients, this recipe is easy, filling, cheap. What more can one ask for?

- 2 lbs Stew Beef
- 3 cups Cubed Potatoes
- 2 cups Sliced Carrots
- 2 cups Sliced Celery
- 1 Chopped Onion
- 10oz can Beef Stock
- Hot Water
- Salt
- Pepper
- 2 tbs oil
- Add chopped onions and beef to heated oil in pot
- Cook until all beef is browned and onions are soft
- Add broth and hot water until all beef is covered plus an inch
- Cover and heat on low for 2 hours
- Add vegetables
- Raise heat to medium and cook 20-30 minutes or until potatos are soft
