Easy Creamy Turkey Soup

Thanksgiving is all about the food; stuff yourself silly while you enjoy family and friends and remember the things that you are thankful for. This year was no exception for our family. However a few days after Thanksgiving and I was very tired of leftovers already, but there was still so much turkey left. I was tired of turkey sandwiches and needed something else that I could feed my family. The solution was easy a Very Creamy Turkey Soup. Less than 10 ingredients and less than 25 minutes to make what could be easier? I love quick and easy but would it taste good? That would have to be proven by my family. So I made the soup and presented it to my husband and children who absolutely loved it. It was a hit and incredibly easy to make.
Ingredients:
½ cup chopped
2 tablespoons butter
2 cups chicken broth
3 cups of potatoes cubed
1 teaspoon salt
1 teaspoon pepper
3 cups cooked turkey cubed
2 cups milk
¼ cup cornstarch
Directions:
Saute onions in butter in for 2 minutes. Add broth, potatoes and seasonings. Simmer until potatoes are tender about 8 minutes. Stir in turkey. In separate bowl add milk to cornstarch and stir into soup. Increase heat to medium and cook for 8 more minutes until soup thickens.
To add other raw vegetables sauté with onions for cooked vegetables add with turkey.
Season to taste and enjoy!
This recipe was so easy and tasted really good. It is so creamy and rich it is enough on its own or with a turkey sandwich (for a unique taste try a grilled cheese with turkey sandwich) or better yet a nice salad with diced turkey on top! I am certain that you can use other vegetables as well as other meats for this chowder like soup. So give it a try and let me know what you think!
