Easy Homemade Scallop Potatoes and Ham

Yields: serves 4 people


  • 1 1/2 cups milk
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp garlic powder
  • 1/8 tsp paprika
  • 4 meduim (2 large) potaotes, peeled, thinly sliced
  • 1 1/2 cups shredded cheddar cheese, Divided
  • 2 tbsp flour
  • 1 small ham steak, cubed
  • 1/2 cup onion, grated, or chopped
  • 2 Scallions, Chopped
  1. Preheat oven to 350 degrees. In a sauce pan combine milk flour and seasonings. Grate the onion if you don't want pieces in the casserole. Cook on medium heat until thickened and bubbly. Add the cheese and melt slowly, stirring constantly. Spray a casserole dish with cooking spray. Add half of the potatoes, ham, and onion (if you like pieces of onion) . Add half the sauce and repeat with remaining potatoes, ham, onion, and sauce. Cover and cook 65 minutes or until potatoes are tender. Uncover, stir once, then add cheese to the top. Cook another 5-10. Let stand for about 10 minutes. I chopped up some green onions and add them to the top of the casserole. Gave a bit of an extra onion flavor with out being to potent. Serve with a salad or fruit. I made a small fruit salad with watermelon, oranges, and banana. Balanced out the creamy and hot meal with something fresh and crunchy.
