Easy Meals For Busy Families - Pistachio Pudding Dessert

Updated on November 12, 2014

I prefer to make desserts rather than eat them. Fortunately (or unfortunately), my family are subjected be to be my "guinea pigs" when I'm testing out a new recipe. So far I've not received any complaints about having to taste-test anything or about the recipes themselves. This is a recipe a cousin of mine had passed along to me, saying it was good, easy to make, and I should test it out on my family. They seemed to like it, so I'm passing it along to the rest of you who are busy, but still love to cook. (I apologize for not taking a picture. I will update later with a photo of my completed Dessert).

Pie Crust:
1 Stick butter
1 C Flour
1 C Chopped Walnuts

Layer 1:
1 C Powdered Sugar
1 (8oz) Cream Cheese
1 C Cool Whip

Layer 2:
2 Regular Sized packages of instant Pistachio Pudding Mix
3 C Milk

Cool Whip
Chopped Almonds

Mix Butter, Flour, and Nuts (Pie Crust ingredients); Press into 9x13 inch pan. Bake at 350F degrees for 20 mins. Once finished, place on the side to cool. Mix Powdered Sugar, Cream Cheese, and Cool Whip (Layer 1); Spread on cooled crust. Beat together Pudding mix and Milk (Layer 2) until thick. Spread on top of Cream Cheese Layer (Layer 1) and top with a layer of Cool Whip and Chopped Almonds. Refrigerate.
