Gather ingredients

The first thing you need to do, Is gather all your ingredients. You will need 8 pounds of chicken (approximetley)& fresh chicken wings are the best to use. 1-12 ounce bottle of FRANKS red hot sauce, 4 tablespoons of Garlic powder, 2 sticks of butter. A medium saucepan to melt your butter in, A large size pot to put vegtable oil in. Fill your large pot about halfway with vegtable oil.

Step 1: Cut up your chicken.

How To cut up the chicken wing.

Cut here to create 2 pieces of chicken.

Step 1: Cutting up the chicken.

If you are using fresh chicken you will need to have a sharp knife to cut up the chicken. Holding onto the chicken you will want to separate the chicken at the joints. You will want to cut off the tip as well. You will want to do all 8 pounds at one time so you wont burn them while they are frying in your grease. Be sure to rinse and blot dry before inserting into the oil to prevent splattering of oil. Be sure to preheat your oil, Make sure the oil is not to hot to prevent flowing over the edges and causing a fire.

Step 2:Adding the chicken to the oil.

You will only want to add about 10-14 pieces of chicken wings into your oil at one time to prevent over crowding and causing them to cook slower. You will want to use your fry scoop to turn them over frequently to make sure they brown evenly on both sides. You will want to let them fry for about 15 minutes to be sure that they are done and not raw inside. I would recommend that you use your scoop to scoop out 1 wing and use a fork to pull it apart to check to see if it is done before removing all pieces from the oil. When they are done they will be a medium golden color. This is when you will want to remove them from the oil.

Step 3: Preparing the Wing Sauce.

While your chicken is frying you will want to melt the butter in the medium pot on low heat, When the butter is melted add enough hot sauce to make it 1 part hot sauce to 1 part butter. You will want to then add your garlic powder and stir in to the butter/hot sauce mixture. Keep on very low setting Do not let it boil!! Taste to adjust it to your own personal tastes. If it is too hot you can add more butter about 1/2 a stick at one time and if not hot enough add a little more hot sauce a little at a time to achieve your personal level of heat.  When wings are cooked you will want to place in a bowl and pour wing sauce over top, to coat evenly stir til coated. Remove to a serving platter and continue with previous steps til all wings are done.

You can serve with home made pizza, (That recipe is yet to come) and can serve as just an appetizer. You can serve with any other meal as you feel would accompany well with. You can make them either mild, medium, hot,or hotter all at one time. To make mild start out with the lowest amount of hot sauce and butter and coat and then add more hot sauce as you feel you will need to achieve everyones taste buds.
