Easy Roasted Tomato Marinara

Short on time or not in the mood for lengthy prep? This simple roasted tomato marinara lets you skip the hours of simmering while still packing in rich, vibrant flavor. By roasting the sauce’s ingredients, you enhance their natural sweetness and depth, creating a delicious homemade sauce in a fraction of the time.

Ingredients
- 10-12 medium to large Ripe tomatoes
- 2 bulbs Garlic
- 1 medium Onion
- 1 Carrot, sliced
- 1 Celery rib, in quarters
- Sprigs of oregano, thyme, basil, Dry herbs work well too
- 1/2-1 cup White wine
- Cooking spray or olive oil
- To taste Salt and pepper
Instructions
- Preheat oven to 400°
- Grease baking pan with olive oil or cooking spray, if you preferred the healthier version.
- Wash and dry tomatoes. De-stem (if necessary) and remove tops. Arrange in baking dish.
- Quarter onion and add to baking dish. Do the same with carrot and celery.
- Cut top off garlic bulbs and place top down in the dish as well.
- Pour white wine into the bottom of the dish.
- Tuck in herb sprigs or sprinkle with dried herbs.
- Salt and pepper the dish
- Set baking dish, uncovered for about an hour. Turning the vegetables every so often until browned and beatiful.
- Remove and allow to cool.
- Once cooled transfer veggies to a pot, except garlic bulbs and herb sprigs (if used). Reserve liquid in bottom of pan. Remove skins from garlic and add to pot. Remove herbs from sprigs and add.
- Using an immersion blender, blend to desired consistency adding reserved liquid as you go.
- Taste and adjust as needed. Reheat and use or freeze for future use.
