Add your water with the yeast in a bowl. Let set for 3-5 minutes until it is frothy looking. Add your flour and salt together in a separate bowl (or put it in your Kitchen-Aid.) To your flour and salt mixture, add the yeast/water mixture, remaining water, and ferment. Knead until smooth, in a Kitchen-Aid this will take about 10 minutes. If you are kneading by hand 15 - 20 minutes.
Grease a bowl and put the dough in it until it is doubled in size (about an hour.) Cut in half and form each half into a ball on a floured surface, then cover with a towel and let the dough "rest" for 15 minutes.
Next you want to press each ball into a rectangle shape and roll each rectangle into a tight loaf. Tuck in the ends on each side to make it look neat and uniform.
Transfer your loaves to a lightly floured baking sheet, and let rest for another 15 minutes covered with a towel. Now dust each loaf lightly with flour and bake at 350 degrees until golden brown, about 20 - 25 minutes.
