Stuffed French Toast

10 mins to cook, serves 6

Ingredients

Vegetarian

Refrigerated

  • 1 Eggs

Condiments

  • 1 Flavor fruit spread

Baking & Spices

  • 1 Cinnamon

Bread & Baked Goods

  • 1 French bread

Dairy

  • 1 Butter
  • 4 oz Cream cheese
  • 1 Skim milk

Preparation Instructions

  1. Heat skillet or electric griddle to 325 to 350 degrees.
  2. Cut french bread into 2-3 inch wide slices. Then, with a paring knife, go back and cut halfway into each slice, in the center, creating a ‘pocket’ that your fruit mixture can be stuffed into.
  3. In a bowl, place the room temperature cream cheese and three tablespoons of fruit spread of your choice.
  4. In a separate bowl, break 2 eggs; add cinnamon and milk and combine well.
  5. Now, take fruit mixture and stuff into the ‘pockets’ of your french bread slices. Place on a baking sheet.
  6. When done stuffing each piece of bread, completely coat each piece in egg mixture. Make sure all sides are covered. Do all pieces before starting to fry.
  7. Put 2 tbsp (you can use less!) of butter into a hot skillet and melt completely. Add all of the bread to the skillet and cook roughly about 3-6 minutes on each side, until it reaches a nice golden brown. You want to make sure the cream cheese mixture heats through.
  8. When done cooking, serve immediately with butter and syrup.

Vegetarian

Produce

  • 1 Raspberries, Fresh

Refrigerated

  • 4 Eggs

Condiments

  • 1 tsp Vanilla bean paste

Baking & Spices

  • 2 tbsp Cocoa powder, unsweetened
  • 1 2/3 tbsp Food colouring, red
  • 4 tbsp Sugar
  • 2 tsp Vanilla extract, pure

  1. For French Toast: Whisk together the eggs, buttermilk, sugar, vanilla, food coloring and cocoa in a shallow bowl until smooth and lump free.
  2. Alternatively, combine these ingredients in a small blender or magic bullet cup; blend until smooth and transfer the egg wash to a large shallow bowl.
  3. Dip bread slices into egg wash and press lightly a few times to soak through completely. Flip each slice and repeat with each bread until slices all are evenly coated.
  4. Heat a large nonstick pan/skillet over low-medium heat and fry the bread in batches of 3 or 4, turning once until just cooked through. Remove and place onto a warmed plate.

Drizzle with melted chocolate; top with remaining cream (optional); dust with icing/confectioners sugar and serve with berries.
