Easy Summer Pasta Salad

Yields: 6-8

Ingredients

  • 1 lb. Pasta, Cooked as directed. I used Penne
  • 1/2 cup Dry Ranch dressing mix
  • 3 tablespoons vegetable oil
  • 2 tablespoons water
  • Various Vegetables, Chopped or diced

How to make

  1. Cook the pasta you've chosen as directed. When done, drain in cold water.
  2. As the pasta cooks, combine the ranch dressing, oil and water in a small bowl and whisk.
  3. Cut and chop your vegetables. For my salad I used radishes, black olives, garbanzo beans, peppers of various colors, and pepperoni slices. But you can add as much or as little of any vegetable you like. Consider, parsley, cilantro, tomatoes, green olives, cucumber, zucchini, chopped ham, salami, get as creative as you like!
  4. Combine all ingredients in a large bowl. Stir well. Refrigerate or serve immediately. Enjoy!
