Tomatoes are used in so many dishes from around the world. There are countless recipes that include the versatile tomato as a main ingredient or as a base for its recipes.

The tomato plant was originally cultivated in Peru and Mexico area. The tomato plant was originally cultivated in the tropical climates of Chile or Ecuador, where it grew all year long. In 1544, an Italian herbalist named Pietro Matthioli put the tomato in the classification of poisonous plants because of it contained solanina, which was thought to be harmful at the time. Both salads take about 15 minutes to make, and serve about 6 to 8 people. They make an easy and beautiful side dish, that everyone who eats it, is sure to enjoy.

Ingredients for Tomato and Bread Salad

  • 3/4 of a pound 1 lloaf of day old bread, cut into 1" cubes
  • 1/4 cup red wine vinegar
  • 4 tomatoes, chopped
  • 2 small red onions, quartered and thinly sliced
  • 1 TBL parsley, fresh and chopped
  • 1 TBL basil, fresh and chopped
  • 1/2 cup olive oil or safflower oil
  • 1/2 tsp salt
  • 1/4 tsjp ground black pepper
  • optional romaine lettuce leaves

Easy Instructions

  1. In a large bowl, sprinkle 1/4 cup water over the bread to moisten.
  2. Sprinkle with vinegar and toss lightly to coat all the bread.
  3. Stir in tomatoes, onions, parsley, and basil.
  4. In a small bowl blend in the oil, salt, and pepper.
  5. Toss all with the bread
  6. Cover and put in the refrigerator for at least 30 minutes to chill the salad before serving.
  7. Line salad plates with Romaine lettuce leaves and place tomato and bread salad on top of the lettuce.
  8. Enjoy!

1/2 cup red wine vinegar

1/4 cup olive oil

1 small clove of garlic, minced

7-8 cups of cherry tomatoes cut in half

1 medium size white onion, sliced very thin

1/2 tsp salt

1/4 tsp pepper

In a large salad bowl, whisk the oil and vinegar together. Add the garlic and oregano. Mix in the tomatoes and onions to coat well. Add the salt and pepper and lightly toss.
