Ingredients

1. Big fleshy fish (sliced) - 1 kg

2. Coconut oil - 3 tbsp

3. Finely chopped onions (big) - ¼ kg

4. Maida - 1 tsp

5. Finely chopped ginger - 2 tsp

6. Garlic paste - ¼ tsp

7. Green chillies sliced - 10 nos.

8. Pepper powder - 2 tsp

9. Curry leaves - 2 stems

10. Water - 1 ½ cups

11. Chopped tomato - 2 nos.

12. Vinegar, turmeric, salt - as required

13. Coconut milk - 2 cups


Preparation and Cooking

1. Heat 3 tbsp of oil in an earthen vessel and add chopped onions into it. Stir it until it turns brown.

2. Add 1 tsp of maida and stir for a minute.

3. Then add items no.5 to 9 into it and stir well.

4. Into this, add items no. 10 to 12 and sliced fish pieces and cook in a medium flame for 15 minutes with the lid closed.

5. When the gravy thickens, add 2 cups of coconut milk and stir continuously until the bubbles come.

6. Then put off the flame and serve hot!

Ingredients

1. Cauliflower - 2 cups

2. Carrot (chopped) - 1 cup

3. Beans (chopped) - 1 cup

4. Chopped onions (Big) - ½ cup

5. Chopped tomato - 1 cup

6. Chopped ginger - 1 tsp

7. Green chillies (chopped) - 6 nos.

8. Coriander powder - 4 tbsp

9. Red chilli powder - 1 tbsp

10. Grated coconut - 2 cups

11. Sliced potato - 2 cups

12. Coconut oil - 3 tbsp

13. Mustard - 1 tsp

14. Salt, curry leaves - as required

15. Water - as required


Preparation and Cooking

1. Slice and clean the cauliflower petals well for 3-4 times with salt water. Keep aside.

2. Cook the chopped carrots and beans with enough amount of water. Keep aside.

3. Heat 3 tbsp of coconut oil in a frying pan and add chopped onions, green chillies and ginger into it. Stir well until the onions turn golden brown.

4. Then add 4 tbsp of coriander powder and 1 tbsp of red chilli powder into it. Stir well.

5. Add the potato slices, the cleaned cauliflower petals, the cooked carrots and beans mixture into this and stir well for 10 minutes.

6. Then add some water into the mixture and put the flame in a medium mode. Boil the contents well for another 10 minutes.

7. When the gravy thickens, add the chopped tomatoes, the grated coconut and curry leaves into it. Cauliflower masala curry is now READY!

8. Finally, roast the mustard seeds in oil and add it into the curry. Then keep it closed for 5 minutes. Now the dish is ready to serve!

Ingredients

1. Sliced beef (small pieces) - 1kg

2. Pepper powder - 1 tsp

3. Chopped onion (big) - 1/4kg

4. Chopped tomato - 2 nos.

5. Coconut oil - 3 tbsp

6. Maida - 50g

7. Powdered sugar - 1 pinch

8. Salt - as required

9. Water - 200ml


Preparation and Cooking

1. Macerate the sliced beef pieces with pepper powder and salt and keep aside for 30 minutes.

2. Then add maida into it and mix. Keep aside for 10 minutes.

3. Heat 3 tbsp of coconut oil in a frying pan and add the chopped onions, stir well.

4. When the onions become brown, add the beef pieces and water (200ml) to it.

5. Cook the beef slices for 20 minutes in a medium flame.

6. Then add chopped tomato and boil until all the water contents evaporate.

7. When the dish is fully dried, put off the flame and add one pinch of sugar powder into it.

8. The beef steak is ready! Serve hot.

1. Chicken pieces (medium size) - 1kg

2. Garlic paste - 2 tsp

3. Clove - 9 nos

4. Cardamom - 6 nos

5. Cinnamon - 4 pieces

6. Ginger paste - 1 tbsp

7. Turmeric powder - 1/2 tsp

8. Coriander leaves - as required

9. Salt - as required

10. Water - ½ litre

11. Onion (big) chopped - 1 no

12. Green chilli chopped - 6 nos

13. Coconut oil - 3 tbsp

14. Ghee - 3 tbsp

15. Cashew nut paste - 1 tsp

16. Curd - 3 tbsp

17. Coriander powder - 2 tsp

18. Red chilli powder - 1 tsp

19. Coconut milk (thick) - ½ litre

20. Mint leaves - as required

21. Lemon juice - 1tsp


Preparation and Cooking

1. Add items No. 2 to 10 to chicken pieces and cook well for 20 minutes in a closed vessel.

2. Boil coconut oil and ghee (3 tbsp each) in a frying pan and add chopped onions, stir well until it turns brown.

3. Add coriander powder and red chilli powder to it and stir.

4. Transfer the cooked chicken into it and boil for 2 minutes in a medium flame.

5. Then add curd, mint leaves and chopped green chillies. Stir for a minute.

6. After that, add coconut milk and cashew nut paste into it and put off the flame. The dish is READY!

7. Finally, add 1 tsp of lemon juice to the dish and serve hot.

1. Prawns - 200g

2. Oil - 2 tbsp

3. Onion (big) - ½ dtsp

4. Onion (small) - 1 dtsp

5. Red chilli (roasted) - 4 nos

6. Ripe tomato - 1 dtsp

7. Green chilli paste - 1 dtsp

8. Garlic paste - ¼ tsp

9. Fenugreek powder - 1 pinch

10. Turmeric powder - 1 pinch

11. Curry leaves - 1 stem

12. Lemon juice - 1 tsp

13. Salt - as required

14. Water - 1 cup


Preparation and Cooking

1. Cut tomato into very small pieces and keep aside.

2. Chop onions and keep aside.

3. Take the prawns in an earthen vessel and add turmeric powder, water and salt into it. Cook for 10 minutes in a medium flame with the lid closed.

4. Heat 2 tbsp of oil in a frying pan, add chopped onions and a pinch of salt and stir well until it turns brown. Keep the flame in medium level.

5. Add green chilli and garlic pastes to it and stir.

6. Then add cooked prawns to the pan and stir.

7. After that, add sliced tomatoes along with roasted red chillies, fenugreek powder and curry leaves. Stir and close the pan with the lid. Put the flame in medium mode and cook for 5 minutes.

8. Put off the flame, open the lid and add a tsp of lemon juice and mix. Spicy prawns is READY!

1. Mushrooms - 250 g

2. Red chilli powder - 1 tsp

3. Turmeric powder - ½ tsp

4. Coriander powder - 2 tsp

5. Tomato - 2 nos

6. Coconut oil - 4 tbsp

7. Ginger paste - 1 tsp

8. Garlic paste - 1 tsp

9. Coriander leaves - 1 stem

10. Curry leaves - 1 stem

11. Salt - as required



Preparation and Cooking

1. Clean and slice the mushrooms into small pieces.

2. Chop tomato, coriander leaves and curry leaves finely.

3. Add and mix all the ingredients (items no.2 to 11, except coconut oil) with mushrooms. Keep it for 10 minutes.

4. Heat 4 tbsp of coconut oil in a frying pan and fry it in a medium flame until it turns brown with occasional stirring.

5. Spicy mushroom dish is now ready! Put off the flame and serve hot.

1. Pork pieces - 1kg

2. Ginger paste - 2 tbsp

3. Green chillies chopped - 4 nos.

4. Onion chopped (big) - 1/4kg

5. Coconut oil - 3 tbsp

6. Red chilli powder - 1 tsp

7. Pepper powder - ½ tsp

8. Garlic paste - 1 tsp

9. Salt - as required

10. Water - as required


Preparation and Cooking

1. Macerate the pork pieces with red chilli powder, pepper powder and salt and keep aside for 30 minutes.

2. Cook it in a pressure cooker, 2 whistles are enough.

3. In a frying pan, heat 3 tbsp of coconut oil; add chopped onions and stir until it turns brown.

4. To this, add garlic paste, ginger paste and chopped green chillies and stir well.

5. After that, add the cooked pork pieces and some water into it. Stir well and boil.

6. Ginger pork is ready! Garnish with onions and serve hot.

7. Pepper powder - ½ tsp

8. Garlic paste - 1 tsp

9. Cinnamon, cardamom, cloves- 25g each

10. Salt - as required

11. Curd - 60 ml


Preparation and Cooking

1. Heat 2 tbsp of oil in a frying pan and add the pork pieces into it. Boil it in a medium flame for 15 minutes with the lid closed. When boiling, the ghee will ooze out, so there is no need of excess oil.

2. When the pork pieces become red brown, take them from the pan and keep aside.

3. Heat the remaining 2 tbsp of oil into the pan and add items no. 3 to 10 one by one. Stir well for 10 minutes.

4. Then add curd and the cooked pork pieces into it and cook it in a medium flame for 10 minutes.

5. When the dish becomes almost thick, put off the flame.

6. Pork Vinthalu is ready! Try it!
